Ingredients:
- 2 eggs, beaten
- 1 cup buttermilk
- 1/4 cup oil
- 1 cup rice flour
- 1/2 cup tapioca flour
- 1 1/2 tsp baking soda
- 1 tsp baking powder
Preparation:
Beat egg whites to form dry peaks. Set aside. Mix egg yolks with buttermilk and oil.In a separate bowl stir dry ingredients together, including tapioca flour. Mix egg yolk mixture into dry ingredients. Fold in egg whites.
Bake in an oiled waffle iron.
This waffle recipe is both gluten-free and wheat-free.
