Caribbean Jerk Tempeh Recipe

In this vegetarian and vegan recipe for Caribbean spiced tempeh, tempeh is marinated overnight in jerk spices such as fresh ginger, jalapenos and nutmeg, then broiled. This tempeh recipe is very easy to prepare, yet bursting with Caribbean flavor. If you like tempeh you might also want to try a Thai basil flavored tempeh recipe or try this recipe for sweet and sour tempeh.

Ingredients:

  • 1 cup apple juice
  • 2 tbsp onion powder
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 jalapeno, minced
  • 2 tbsp white vinegar
  • 1 tbsp olive oil
  • 1 tbsp fresh ginger, grated or minced
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp pepper
  • 1/4 tsp thyme
  • 1 package tempeh, steamed
  • 5 scallions (green onions), sliced

Preparation:

Whisk or blend together all the ingredients excpet tempeh and scallions thoroughly.

Slice the tempeh into 2 x 1 inch strips and place in a baking pan. Pour the spice mixture over the tempeh and coat thoroughly. Allow to marinate overnight.

Heat oven to a broil, or to the highest temperature.

Cook for 4 to 6 minutes, turn, then cook for another 4 to 6 minutes. Top with scallions before serving.
